Diese k\u00f6nnen von einem zus\u00e4tzlichen Gesundheitsnutzen bis hin zu bestimmten sensorischen Eigenschaften reichen.\u00a0Neue Verfahren erm\u00f6glichen die Gewinnung,\u00a0Charakterisierung\u00a0und schonende Verarbeitung der Inhaltsstoffen f\u00fcr deren Einsatz.<br \/>In den letzten Jahren ist es der Wissenschaft zudem gelungen, die\u00a0Biofunktionalit\u00e4t\u00a0von Inhaltsstoffen und die Wechselwirkung mit Genen\u00a0immer besser zu verstehen.
