The reason lies in large-scale preventive recalls of infant formula and follow on milk products, which have sharpened awareness of risks that were previously underestimated.<\/p><p>The trigger for these recalls is a <strong>heat stable toxin produced by the bacterium Bacillus cereus: cereulide.<\/strong> A compound capable of withstanding thermal processing steps such as pasteurization or spray drying without degradation.<\/p><p>International food manufacturers, including well known global brands, are tightening their internal control systems. At the same time, contract laboratories, manufacturers, and raw material suppliers are facing increasing pressure to establish reliable analytical methods for the accurate determination of cereulide.<\/p><h4>What Is Cereulide and Where Does the Risk Lie?<\/h4><p>Cereulide is a cyclic dodecadepsipeptide produced by certain emetic strains of Bacillus cereus. <strong>It is extremely heat stable, acid resistant, and toxic even at very low concentrations.<\/strong><\/p><p>For this reason, traditional microbiological testing is insufficient.
