Cereulide is a cyclic dodecadepsipeptide produced by certain emetic strains of Bacillus cereus. It is extremely heat stable, acid resistant, and toxic even at very low concentrations. For this reason, traditional microbiological testing is insufficient. The presence or absence of Bacillus cereus as a microorganism alone does not provide reliable information, since even microbiologically clean products may still contain relevant levels of cereulide. This poses a particularly critical risk for: • Infant formula and baby food • Dairy products and milk derived ingredients • Nutraceuticals and dietary supplements • Lipid rich raw materials (e.g. ARA or DHA oils).
