Lactic acid is produced by fermentation from carbohydrates and is used in different industries due to its various advantages. Lactic acid is most commonly used by the food and beverage industry as an acidifier in i.a. baked goods, confectionery, sodas or ice creams. Its ability to stabilize pH has been used for centuries to preserve food. But other industries are also taking advantage of lactic acid. Due to their antibacterial effect lactic acid is added to soaps, detergents or dishwashing liquids. From the polymer polylactic acid biodegradable bioplastics are produced.
