Cereulide in ACN (50 µg/mL)

Cereulide is a cyclic dodecadepsipeptide produced by certain emetic strains of Bacillus cereus. It is extremely heat stable, acid resistant, and toxic even at very low concentrations. For this reason, traditional microbiological testing is insufficient. The presence or absence of Bacillus cereus as a microorganism alone does not provide reliable information, since even microbiologically clean products may still contain relevant levels of cereulide.
